i know the lens mount is the same, but as far as sensor sizes, picture color and sharpness, durability, features etc. from a professional standpoint, what are the differences?

The professional level DSLR cameras generally have a larger sensor, weather sealing, better build (magnesium alloy body frame instead of plastic), a shutter that is rated for up to 200,000 more shots, better ISO performance, and a faster frame rate per second.

You need some time on Canon’s website.
The next step up are the x0D cameras. Sturdier build and better environmental seals. They also have more advanced electronics on-board. Those and the Rebel camera bodies can use both EF-S and EF Canon lenses.
The 1D cameras have a slightly less than full frame sensor, but still cannot use any of the EF-S lenses. They are the first of the original Canon professional cameras
The 1Ds cameras are full frame cameras, again professional level cameras. They can only use EF Canon lenses
The 5D cameras are too full frame cameras, but not built to the standard of the 1Ds series cameras
Sharpness has all to do with the auto-focus systems and they are excellent. Picture colour is mostly identical from camera to camera.
If you spend some time visiting a camera store and hold each of those cameras in your hands, you should get a good feel for the slight differences in camera builds
The higher the price, the more range of controls you get, the easier to access those controls, the better and bigger the sensor is, the more megapixels it has (if same year models). Feature-wise is a toss up. More technical features abound in higher-end models while more point-and-shoot features appear in lower-end models.
